Dan Jiao Soup

Ingredients :
(Serves 5)

  • 250gm Pork cut into pieces
  • 100gm Noodles, boiled according to the directions on the package

For Dumplings :
  • 150gm Cooked and ground pork
  • 6 Eggs
  • 1 tbsp Soya sauce
  • 2 Green onions, minced.
  • 2 Green onions, finely sliced
  • 1 Sprig parsley, chopped

Preparation :

Dan Jiao Soup
Boil the pork in 1 litre water till cooked. Mix in the noodles. Now prepare the dumplings:-beat the egg with slat. Combine minced pork, soya sauce, ginger and onions. Grease a frying pan and pour in 1 tbsp oil, pour in 2 tbsp of egg mixture. Immediately place 1 tbsp of meat mixture in the centre of the egg. When the underside turns firm, fold over, press don edges with a flat spatula and remove from pan. repeat the process until all the ingredients are used up. Put all the dumplings, onions and parsley in the soup and simmer for 1 minute. Serve Dan Jiao Soup at once.

Exotic Wonton Soup

Ingredients :
(Serves 6)

For the Skins :
  • 11/2 Cups sifted flour   
  • 1 Egg, beaten lightly
  • 1 tsp salt

For the Filling : 
  • 250gm Ground Chicken
  • 1 Small onion, minced
  •  1/4 tsp ginger, minced
  • Salt and pepper to taste

For Soup :
  • 1 litre Chicken stock
  • 1/2 Cup roast chicken, shedded
  • 4 Green onions, sliced
  • 1/2 Cup celery, chopped

 For Decoration :
  • 2 Hard boiled eggs, crumbled
  • Some shredded chicken 




Preparation :
Exotic Wonton Soup

Mix together flour, egg, salt along with enough water to form a stiff dough. Mix the filling ingredients together. Form the dough and filling into wontons.

Cook wantons in boiling water for 2 minutes. Put in individual bowls. Heat chicken stock, add celery and onions, pour over the wontons. Decorate with shredded chicken and 2 crubled hard-boiled eggs. Your Exotic Wonton Soup is ready to serve.
