Ingredients (Serves 4)
Preparation :
Cut the chicken into neat cubes. Mix with egg white, half the cornflour and salt. Deep fry to a golden color. Drain. Heat 3 tbsp oil and fry capsicums, diced chillies, mushrooms, green onions and ginger for 3 minutes. Add chicken. Mix well, add chilli sauce, soya sauce, brandy and sugar. Mix the remaining cornflour in 1/4 cup chicken stock or water. Put into the cooked chicken. Cook till thick. Serve hot
- 250 gm chicken meat
- 50 gm fresh green chillies
- 100 gm capsicums, seeded and sliced
- 1 tbsp chilli sauce
- 3 green onions, sliced
- 1/2 inch piece ginger, shredded
- 1 tbsp each of brandy and soya sauce
- 1 tsp sugar
- 50 gm shredded mushrooms
- 1 tbsp cornflour
- Salt and pepper to taste
