Prawns Chilli

Ingredients (Serves 2)

  • 250 gm king-size prawns
  • 2 green onions, shredded
  • 8 chillies, seeded and slitted
  • 1 inch piece ginger, shredded
  • 1 tbsp brandy
  • 2 tbsp cornflour mixed with 2 beaten egg whites
  • 1 tbsp, vinegar
  • 2 tsp sugar
  • Salt and pepper to taste
  • A few parsley leaves
  • 2 flakes garlic

Preparation :

Prawns Chilli
Mix together sugar, sauce, salt and vinegar. Mix prawns with brandy and cornflour mixture. Deep fry the prawns and remove to a plate. Heat 3 tbsp oil and fry ginger, onion, chillies and 2 flakes crushed garlic, when fragrant, put in the prawns along with vinegar mixture, heat thoroughly and serve hot.

Exotic Chicken Rice

Ingredients (Serves 5)

For Rice :


  • 2 cups rice
  • 4 cups chicken stock
  •  50 gm onions, finely sliced
  • 1 tsp minced garlic
  • 1 tsp minced ginger
  • Salt to taste

Besides  :

  • 1 chicken, cooked and shredded
  • 1 cucumber, thinly sliced
  • 1 tomato, thinly sliced
  • 2 green onions, thinly sliced

For Sauce :

  • 4 tbsp soya sauce
  • 4 tbsp minced ginger mixed with 4 tbsp water
  • 4 tbsp chilli sauce

Preparation :

Chicken Rice
Chicken Rice
Mix chicken together with cucumber, tomato and onion and place in a serving dish. Heat 4 tbsp oil and fry onion, ginger and garlic to a golden color. Add rice and salt, put in the stock, bring to a boil. Reduce heat and cook till tender and dry. Put the rice in a serving dish and put chicken on top. Serve the sauce separately.


Chinese Hot Pot Soup


Ingredients (Serves 12 to 14)

  • 500 gm meat without bone
  • 500 gm chicken without bone
  • 500 gm prawns, cleaned
  • 500 gm kidney
  • 500 gm liver
  • 500 gm mixed shredded vegetables like cabbage, peas, carrots and french beans
  • 200 gm shredded mushrooms
  • 200 gm spinach
  • 250 gm noodles, boiled

For the Sauce :
  • 1 cup soya sauce
  • 1/2 cup brandy
  • 4 tbsp chilli sauce
  • 1/2 cup til oil
  • 4 green onions, minced
  • 1 inch piece ginger, minced

Chinese Hot Pot Soup

Chinese Hot Pot Soup

Cut the meats into as thin slices as possible and arrange these separately in a plate. Mix sauce ingredients and place 3 to 4 dishes around the tables. Put a big pot on an electric fire on the dinning table. Fill it with water. Add half the amount of vegetables and cook for 10 minutes. to extract juices. Each guest picks up the meat of his choice with a long fork and dips it in the boiling soup for 2 to 3 minutes, then quickly dips it in the sauce and eats it while still hot. When all the meats have been eaten the vegetables and noodles are added to the soup and boiled for 5 minutes. These are served in bowls to the guests. If you like you can also serve a rice dish with the soup.

Spinach with Noodles


Ingredients (Serves 6)

  • 2 cups spinach
  • 1 tsp cornflour
  • 1 egg white
  • 1 tbsp brandy
  • 15 prawns, cleaned
  • 200 gm noodles cooked according to the direction on the package
  • 2 tbsp brandy
  • 1/2 tsp ajino motto
  • Salt and pepper to taste
  • 1 medium tomato, blanched and sliced
  • 2 flakes garlic, crushed
  • 1 tbsp cornflour

Preparation :

Spinach with Noodles
Cook the spinach with salt and tomato till soft. Mash and pass through sieve.Mix in 1 tbsp cornflour along with enough water to form a thick paste. Add 2 tbsp brandy and ajino motto. Mix together egg white, 1 tbsp brandy and 1 tsp cornflour. Dip the prawns in it and deep fry to a golden color. Mix the prawns into the spinach and heat well. Heat 3 tbsp oil and fry thr garlic and put over the spinach. Put the noodles in a serving dish and pour spinach on top.

Biryani - Meat Biryani


Ingredients (Serves 4)

  • 3 cups boiled rice
  • 1 big onion
  • 6 flakes garlic
  • 1 inch piece ginger
  • 4 red chillies
  • 500 gm boneless meat / mutton, cut into thin slivers against the grain
  • 1 cup sliced mushrooms
  • 50 gm sliced  tomatoes
  • 1 tbsp soya sauce
  • 2 tsp cornflour dissolved in 1/4 cup water
  • Salt and pepper to taste

Preparation :

Biryani - Meat Biryani
Grind together onion, ginger, garlic and chillies. Heat 5 tbsp oil and fry the ground paste for 1 minute. Add meat / mutton and fry to a brown color. Add mushrooms and 1 cup hot water along with tomatoes and spices and soya sauce.  Bring to a boil, reduce heat and cook for 10 minutes. Add cornflour. When the sauce thickens, put the meat / mutton over hot rice and serve at once.

Veg Squares

Ingredients (Serves 4)
  • 5 tsp olive oil
  • 1 big garlic cut into very thin pieces
  • Yellow, green and red bell pepper
  • 2 green zucchini
  • 8 white big size mushrooms
  • Salt and pepper to taste
  • Grill square


Preparation:
Veg Squares
 Cut bell peppers and  zucchini in eight big pieces. Cut each mushrooms in 2 pieces. Take fry pan. Add 5 tsp olive oil and heat oil on  low gas flame. Add pieces of garlic, fry it and close the gas flame. Then add salt and peeper according to taste. Keep this  mixture as such for 30 minutes. Insert above vegetables in grill squares. insert 6 pieces of bell pepper (red, green, yellow), 4 pieces of zucchini and 4 mushrooms pieces on each grill squares. Apply mixture of oil (which is kept in pan) to vegetable by brush. Keep this grill squares in oven and grill the vegetable. or you can shallow fry these vegetables on fry pan.

Veg Dessert with Almonds -Three-Sister's Dessert

Ingredients (Serves 4)

1 cup cooked peas
1 cup boiled and mashed potatoes
1 cup cooked and mashed rajma or red kidney shaped beans
Roasted and sliced almonds, cashew nuts


Preparation :


Three-Sister's Dessert
Mash peas and pass through a sieve. Mash the potatoes till creamy. Mash rajma and pass through sieve. Heat 4 tbsp oil and boil it.Then add peas and 4 tbsp sugar. Fry for 5 minutes and put in a serving dish. In the same way fry potatoes and beans and keep in the same dish.Stir so the colors will run together. Decorate with roasted and sliced almonds and cashew nuts.


Chinese Mixed Vegetables

Ingredients (Serves 6)

  • 500 gm mixed vegetables like carrots, french beans, cabbage , peas, broccoli, capsicums (you can use capsicum of  3 types- red, green and yellow)
  • 1/2 cup bean sprouts
  • 1/2 cup tomato strips
  • 1 spring parsley, chopped
  • 1/2 tsp ajino motto
  • 1 tsp soya sauce
  • Salt and pepper to taste

Preparation : 
Chinese Mixed Vegetables

Shred carrots, french beans, cabbage and capsicums (all 3 types or as per your like), broccoli. Heat 5 tbsp oil and add shredded vegetables and bean sprouts. Cook over high heat for 5 minutes. Drain out the oil and mix in sauce and spices. Cook for 1 more minute. Decorate with tomato and parsley.



Cream of Broccoli Soup


Ingredients (4 serves)

  • 2 cups broccoli (Remove stem of the broccoli and take upper portion )
  • 4 cup vegetable stock
  • 3 to 4 garlic cut in small pieces
  • 1 tsp olive oil
  • Salt and black pepper to taste
  • Fresh cream or Cheese

Preparation :

Cream of Broccoli Soup
Warm olive oil on hot pan. Fry pieces of garlic on it. Add stock of vegetable and broccoli in it. Boil for 20-25 minutes. After cooking  vegetable stock and broccoli, grind this mixture in mixer. Again put this mixture on gas and boil for few seconds. Add salt and black pepper in it and garnish with fresh cream or cheese and serve hot.

Exotic Chinese Pudding

Ingredients (Serves 4)

  • 1/2 pkt. pineapple jelly
  • 1/2 pkt. strawberry jelly
  • 1 tin lichees
  • 2 cups milk
  • 2 tsp finely sliced china grass
  • 3 tbsp sugar
  • 2 tbsp, sliced almonds
  • A few drops essence of almonds
  • 1 cup sugar
  • 4 cups water


Preparation :

Exotic Chinese Pudding
Prepare a syrup with sugar and water and place in the fridge to chill. Prepare both the jellies according to the directions on the package. Make them separately in flat pans and chill in the fridge. Put china grass in 1/4 cup water and melt over a slow fire. Mix sugar with milk and cook over a slow fire till the sugar dissolves. Mix in china grass, bring to a boil and remove from fire.Cool, mix in the essence and almonds and put in a flat dish. Chill in the fridge till firm. Cut the jellies and the china grass in diamond shapes and put into a serving dish, pour the syrup on top and decorate with drained lichees. If you like you can serve this with ice cream or cream.

Grill Fish

Ingredients (Serves 8)

  • 1 kg fish, cleaned and sliced
  • 1 tsp ground ginger
  • 1 tsp ground garlic
  • 3 tbsp each of soya and brandy
  • Salt and pepper to taste

Preparation :

Grill Fish
Take fish in bowl and add ground ginger, ground garlic in it. Add 3 tbsp soya sauce and brandy in it. After that add salt and pepper according to your requirement. Mix together and set aside for 1 hour. Grill till golden colored. Serve hot.




Flaky Fish

Ingredients (Serves 4)

  • 500gm lean fish
  • 1 inch piece sliced ginger
  • 4 green onions, sliced
  • 2 tbsp brandy
  • 1 tbsp soya sauce
  • 2 tbsp oil
  • 1 tbsp sugar

Preparation :

Flaky Fish
Marinate the fish with ginger, brandy and onion  for half an hour. Steam till cooked. Heat a pan, add the steamed fish with the liquid and mash well over low heat till dry. Add the remaining ingredients and cook till the fish becomes flaky and golden.

Mixed Chop Suey

Ingredients (Serves 6) 

  • 200 gm boiled noodles
  • 100 gm fried noodles
  • 1/2 cup cooked prawns
  • 1/2 cup bean sprouts
  • 4 green onion, finely slice
  • 2 tsp soya sauce
  • 1 capsicum, seeded and shredded
  • 1/2 cup each of shredded carrots, cabbage and French beans
  • 2 eggs, made into thin omelets and cut into strips
  • 1/2 cup cooked shredded chicken
  • 1 tsp cornflour mixed with 1/2 cup chicken stock
  • 1/4 tsp ajino motto
  • 4 tbsp tomato sauce
  • 2 tbsp chilli sauce
  • Salt and pepper to taste

Preparation :

Mixed Chop Suey
Heat 5 tbsp oil and fry onions, vegetables with spices for 3 minutes over high heat. Add prawns and chicken and remove from fire. Put boiled noodles in a deep dish and put the vegetables mixture on top, cover with fried noodles. heat chicken stock, add cornflour, tomato and chilli sauce. Cook till thick, pour over fried noodle sand decorate with egg strips.


Fried Chicken

Ingredients (Serves 4)

  • 1 chicken, disjointed
  • 1 small onion
  • 1/2 inch piece ginger
  • 4 flakes garlic
  • 4 tbsp soya sauce
  • 2 tbsp brandy
  • 1 egg beaten
  • 1 tbsp cornflour
  • Salt and pepper to taste


Preparation :

Fried Chicken
De-bone the chicken and cut into cubes. Prepare a batter with egg, cornflour, salt and pepper. Grind garlic, ginger and onion and extract juice. Mix with brandy, slat and soya sauce and put in the chicken. Set aside for 4 hours. Dip the pieces in egg and deep fry to a  golden color. Serve with chinese chilli sauce.

Chicken Chow Mein

Ingredients (Serves 4)

  • 1 cup cooked and shredded chicken
  • 250 gm noodles boiled according to the directions on the package
  • 1 cup bean sprouts
  • 250 gm mixed shredded vegetables like French beans, carrots, cabbage and capsicums
  • 4 green onions, finely sliced
  • 1 cup chicken stock
  • 2 tsp, cornflour dissolved in 1/2 cup chicken stock
  • 2 tsp, soya sauce
  • 2 tsp each of chilli sauce and tomato sauce
  • 1/4 ajino motto
  • Salt to taste

Preparation :
Chicken Chow Mein

Heat 5 tbsp oil and fry all the vegetables over high heat for 2 minutes. Mix together chicken stock, cornflour, all the sauces and spices and put inside. Add chicken and cook till thick. Put over the noodles and serve at once.




Tomato Fried Rice with Prawns

Ingredients (Serves 6)

  • 2 cups Basmati rice, boiled
  • 1/2 cup cooked prawns
  • 2 eggs prepared into strips as shown in assorted rice
  • 1 cup shredded cabbage
  • 100 gm French beans, cut into bits
  • 4 green onions, sliced
  • 2 medium tomatoes, sliced
  • Handful of finely chopped parsley
  • 2 green chillies, mince
  • 2 tsp soya sauce
  • 1 tsp ajino motto
  • Salt and pepper to taste


Preparation :
Tomato Fried Rice with Prawns

Heat 1 tbsp oil and lightly fry tomatoes along with parsley and chillies and set aside. Heat 5 tbsp oil and add all the vegetables. Fry for 3 minutes. Add rice, spices and prawns and fry for 3 more minutes. Lightly toss in the tomatoes and egg strips and serve at once.

Mutton Balls - Meat Balls

Ingredients (Serves 8)

  • 450 gm minced mutton or keema
  • 250 gm potatoes, boiled, peeled and mashed
  • 2 eggs
  • 1 small onion, minced
  • 2 cups short-grain rice
  • 1 tsp sugar
  • 2 tsp soya sauce
  • 2 tsp minced ginger
  • 2 green chillies, minced
  • Salt and pepper to taste

Preparation :
Mutton Balls - Meat Balls

Soak the rice whole night in water. Drain  thoroughly and spread on a tray. Mix together remaining ingredients and form into round balls. Roll the balls in rice till they are well coated. Steam for 45 minutes. Do not keep the balls very close, keep them about 1- inch apart from each other. Mustard and soya sauce should be served in small plates with the balls.

Chinese Mixed Grill


Ingredients (Serves 4)

  • 500 gm boneless mutton / meat , cubed
  • 250 gm king-size prawns, cleaned
  • 100 gm carrots, cut into pieces
  • 100 gm capsicums, seeded and cut into wedges
  • 100 gm mushrooms
  • 1000 gm small onions, peeled

For Sauce :

  • 1 cup finely minced green onion
  • 3 tbsp garlic paste
  • 1/2 cup brandy
  • 3 tbsp chilli powder
  • 3 tbsp ground ginger
  • 1/2 cup coriander powder
  • 1 cup soya sauce
  • 1 cup til oil
  • 1/2 cup sugar
  • Salt and pepper to taste

Preparation :

Chinese Mixed Grill
Place vegetables, mutton / meat and prawns attractively on a plate. Place the seasonings in small bowls. Heat grill and grease it. Each person cooks the food he prefers. He prepare the dip of the seasonings to suit his taste. The food is first dipped into the sauce then place upon the grill, or the food may be dipped into the sauce after it is cooked. Place the food in a single layer on the grill and cook on both the sides till done.

Chicken Mao

Ingredients (Serves 4)

  • 250 gm chicken meat
  • 50 gm fresh green chillies
  • 100 gm capsicums, seeded and sliced
  • 1 tbsp chilli sauce
  • 3 green onions, sliced
  • 1/2 inch piece ginger, shredded
  • 1 tbsp each of brandy and soya sauce
  • 1 tsp sugar
  • 50 gm  shredded mushrooms
  • 1 tbsp cornflour
  • Salt and pepper to taste
  • egg white

Preparation :

Chicken Mao
Cut the chicken into neat cubes. Mix with egg white, half the cornflour and salt. Deep  fry to a golden color. Drain. Heat 3 tbsp oil and fry capsicums, diced chillies, mushrooms, green onions and ginger for 3 minutes. Add chicken. Mix well, add chilli sauce, soya sauce, brandy and sugar. Mix the remaining cornflour in 1/4 cup chicken stock or water. Put into the cooked chicken. Cook till thick. Serve hot

Fried Prawns with Spinach

Ingredients (Serves 6)

  • 500 gm cleaned prawns
  • 500 gm cleaned spinach, ground
  • 1 tsp minced ginger
  • 1 cup chicken stock
  • 2 tsp soya sauce
  • 4 tbsp pureed tomatoes
  • 2 tbsp cornflour dissolved in 1/2 cup water
  • Salt and pepper to taste

Preparation :

Fried Prawns with Spinach
 Heat 4 tbsp oil and fry prawns to a pink color. Add ginger, spinach , chicken stock, soya sauce, tomatoes, salt and pepper. Cook for 10 minutes. Add the cornflour and cook till thick. Serve with boiled rice.

Liver Soup

Ingredients (Serves 3)

  • 250 gm liver, minced
  • 1 tbsp, brandy
  • 2 egg whites
  • 150 gm minced chicken
  • 6 cups chicken stock
  • salt and pepper to taste

Preparation :
Liver Soup

Mix liver with 1 1/2 cup chicken stock. Beat the egg whites till stiff and put into the liver. Spread on a plate and steam till firm. In the remaining stock add chicken and salt and pepper and boil for half an hour. Cut the liver into pieces and boil for an hour. Serve decorated with chopped parsley.

Almond Jelly

Ingredients (Serves 4)

  • 4 cups milk
  • 4 tsp finely sliced china grass
  • 5 tbsp sugar
  • 4 tbsp cream
  • 4 tbsp minced almonds
  • A few drops of almond essence
  • 1/2 cup sugar
  • 2 cups water
  • 6 slices canned pineapple
  • 6 canned cherries


Preparation :

Almond Jelly
Dissolve china grass in 1/4 cup water over low heat.Mix in sugar and milk. When the sugar dissolves completely remove from fire. Cool and mix in cream and almonds.Put in a flat pan and chill till firm. Prepare a syrup with sugar and water and chill. Add essence. Cut china grass into neat squares and pour syrup on top. Put pineapple slices on top. In the hole of the centre of each pineapple slice place a cherry serve.

Drunken Chicken

Ingredients ( Serves 4)

  • 1 chicken
  •  2 tbsp salt
  • 1 tbsp ginger juice
  • 1 cup brandy or rum

Preparation :
Drunken  Chicken
Make gashes on the chicken and rub inside out with salt and ginger juice. Leave whole night  in the fridge. Steam the chicken till tender. Line the inside of a deep bowl with chicken skin, place the chicken pieces inside. Pour in the brandy   till the chicken pieces are fully covered with the  wine. Set aside for 6 hours abd once with a green salad.

Walnut Cakes

Ingredients  (Serves 8)
  • 2 1/2 cups refined flour
  • 3/4 cup castor sugar
  • 1/4 tsp salt
  • 1 egg and yolk of 1 egg
  • 3/4 cup margarine or butter
  • 2 tbsp milk
  • 1/3 cup chopped walnuts
  • 1 tbsp water
  •  A few halved walnuts

Preparation :

Walnut Cakes
Sift together flour, salt and baking powder. Mix in butter. Add sugar, egg, milk and 1 tsp vanilla essence and chopped walnuts. Knead to a smooth dough. Chill. Roll into small and flat balls. Press walnut in the center of each cake. Mix water and egg yolk. Brush the top of each cake with egg yolk mixture and bake in a moderate oven for 25 minutes.

Chinese Fried Noodles

Ingredients : (Serves 4)
  • 1 packet egg noodles, parboiled.
  • 1 cup lean cooked pork, shredded
  • 1cup roast pork, shredded
  • 4 green onions, thinly sliced
  • 1 egg beaten, fried like omelet and shredded
  • 1 tbsp, cornflour blended with 1/2 cup pork stock
  • 2 cups pork stock
  • Salt and pepper to taste

Preparation :
Chinese Fried Noodles
Heat 3 tbsp oil and fry the noodles to brown evenly. Put in a deep dish.Heat 2 tbsp more oil and fry onions and lean a pork for 1 minute. Mix together pork stock, cornflour, salt and pepper and put in, cook till thick. Mix in roast pork and egg. Serve over noodles.
